You will own the sushi program at Costa Fuego.
Sushi is a real part of our menu, not an afterthought. Guests sit on the lakefront patio after a day of wakeboarding or floating in the aqua park, and they want fresh, well-made rolls and nigiri. That is where you come in.
You will run the sushi station during lunch and dinner service. That means breaking down and prepping fresh fish, cutting and shaping rice, rolling sushi to order, plating nigiri and sashimi, and keeping the line moving when the patio is full. You will also help build out the rolls list and adapt items based on what comes in fresh that week.
The kitchen is fast and the energy is high, especially on weekends and summer evenings. But it is also lakefront, casual, and built around a team that genuinely likes being here. If you have done sushi work and want a summer that does not feel like every other restaurant gig, this is the spot.

Responsibilities
- Roll sushi to order during service
- Prepare nigiri and sashimi
- Break down and portion fresh fish
- Cut, season, and shape sushi rice
- Manage the sushi station during peak rushes
- Maintain a clean, food-safe station
Requirements
- Prior sushi or sashimi kitchen experience required
- Age 18 or older
- Strong knife skills
- Food handler card (we will help you get one)
- Ability to stand for full shifts in a fast-paced kitchen
- Weekend and evening availability
Schedule
- Seasonal role, summer 2026
- Full-time and part-time considered
